A unique beer from Dogfish Head
Dogfish Head Chicha (chee-chah) is most closely based upon Peruvian brewing traditions.
With the most authentic interpretation possible: organic pink Peruvian pepper corns, yellow maize and organic Peruvian purple maize. They also use strawberries - a traditional chicha ingredient. The most exotic and unique component of this project, from the perspective of the American beer drinker, happens before the beer is even brewed. As per tradition, instead of germinating all of the grain to release the starches, the purple maize is milled, then moistened in the beermakers mouths and formed into small cakes which are flattened and laid out to dry before adding to the wort.

How many homebrewers want to replicate this recipe?? Mmmm maize.

Beer Aeration, Oxidation and Mitigation

Oxidation is not the same as aeration. Aeration is the process by which oxygen is introduced to your beer or your wort, oxidation is the outcome, it is what happens to your wort or beer when exposed to oxygen at the wrong point in the process. Aeration of COOL wort (<80f)>read more... http://www.brewersfriend.com/2009/08/22/beer-aeration-oxidation-and-mitigation/

He's Nationwide

I noticed on a another blog that our favorite brewer is a celeb.
"Worthog" friends and myself were at Flying Saucer in Kansas City last night for the rare New Holland Brother Jacob Dubbel. After a few, someone pointed out some guy who had passed out right after ordering a full beer (notice the daylight). I couldn't resist so I went up and talked to his buddies who were having a casual conversation while this guy was snoring in the middle of the bar. They say that he does this all the time and he is just 'power napping', but he was out for a while. Can someone say narcoleptic?"
...or perhaps too many Brother Jacob's Dubbels?

Add the fruits of Michigan in your beer!
Now is the perfect time for creating fFruit-flavored beers and they are fun to make. One advantage the home brewer has over large breweries is the use of local ingredients and less concern over cost per unit. There are three options for adding fruit flavors to your beer, and they vary in cost, effort, and flavor...
